Alla Pizzeria L\u2019Ammaccata la primavera si vive attraverso i grani tradizionali, verdure locali e cottura a legna, quella di un tempo. Un ritorno alle radici, tra gesti lenti, antichi sapori e memoria<\/h4>\n\n\n\n<p>Le mani e il grano: un intreccio che d\u00e0 vita a sapori, tradizioni, valori. In una parola, vita. \u00c8 su questo fil&nbsp;rouge che Cristian Santomauro&nbsp;nel Cilento sperimenta in vista di Pasqua percorsi che vogliono&nbsp;unire tradizione e speranza.<em>&nbsp;\u201cHo scelto un menu che raccontasse la rinascita, quella della natura e quella interiore, come accade in primavera &#8211;&nbsp;<\/em>spiega &#8211;<em>&nbsp;E il grano, da sempre, \u00e8 il simbolo perfetto di questo ciclo: nasce dalla terra, cresce lentamente, si trasforma con cura. Tutto parte da l\u00ec. L\u2019Ammaccata, per me, \u00e8 il gesto originario: ripercorre la preparazione del pane, fatta di gesti, di attese, di tempo, e condivisione. Ho voluto che ogni portata fosse legata a ci\u00f2 che la terra regala, in questo momento dell\u2019anno: le verdure primaverili, i legumi, le erbe spontanee. Ingredienti semplici, ma vivi, che parlano di un territorio che resiste e si rinnova. Questo menu \u00e8 un omaggio alla terra, ai suoi cicli, e ai ricordi che porta con s\u00e9\u201d.&nbsp;<\/em>In Cilento, dunque, nella terra dove \u00e8 nata la Dieta Mediterranea, Santomauro &#8211; il pi\u00f9 giovane tra gli ambasciatori di questo patrimonio immateriale &#8211; nella sua Pizzeria L\u2019Ammaccata, a Casal Velino, fa della Pasqua un\u2019occasione per tornare alle origini, alla terra e ai suoi frutti, e per apprezzare attraverso il gusto il risveglio della primavera: la rinascita del grano, delle erbe spontanee e delle verdure di stagione. &nbsp;<\/p>\n\n\n\n<figure \/><\/figure>\n<\/figure>\n\n\n\n<p>Alla Pizzeria L\u2019Ammaccata la cucina diventa racconto: ogni piatto prende vita da ingredienti semplici, autoprodotti o scelti con cura tra piccoli produttori locali e realt\u00e0 di prossimit\u00e0. \u00c8 questo il principio autentico della Dieta Mediterranea, che valorizza ci\u00f2 che la terra offre nel suo tempo giusto, privilegiando stagionalit\u00e0, territorio e sostenibilit\u00e0 ambientale.&nbsp;\u201c<em>Tutto ha origine dal grano e dal fuoco, dalla terra e dalla comunit\u00e0, in un percorso legato al ciclo della panificazione: un percorso agricolo e simbolico che comincia nei campi di grano saragolla, risciola e carosella, coltivati nei terreni che circondano la pizzeria\u201d-<\/em>&nbsp;sottolinea- Cristian Santomauro. Da questi grani nasce l\u2019Ammaccata e tutto il ciclo della panificazione, ma anche nuove sperimentazioni: Cristian ha infatti iniziato a produrre pane per i suoi ospiti, birra a partire dagli stessi grani, e una nuova versione di pizza fritta. Al centro della proposta del menu di Pasqua e Pasquetta c\u2019\u00e8 la stagionalit\u00e0. La cucina della Pasqua cilentana diventa cos\u00ec un viaggio tra legumi, verdure spontanee, conserve fatte in casa, il forno acceso, il profumo dell\u2019impasto e della legna che brucia lentamente. Il menu \u00e8 un omaggio al Cilento e al risveglio della natura, dagli antipasti che comprendono l\u2019Ammaccata Gialla del Cilento, verdure miste di stagione, legumi, salumi, mozzarella al mirto, l\u2019Ammaccata con le foglie, poi il primo, lasagna con carciofi, fave e asparagi, in alternativa i fusilli con il classico rag\u00f9 cilentano, per poi fare un assaggio dell\u2019Ammaccata Originale, come secondo il capretto \u201carrecanato\u201d cotto al forno a legna con patate e rosmarino, un pre-dessert, il sorbetto artigianale ai mirtilli e la bon bon di \/><\/figure>\n<\/figure>\n\n\n\n<p>Ogni piatto \u00e8 legato a una storia, a un ricordo e racconta il territorio:&nbsp;l\u2019Ammaccata&nbsp;Gialla del Cilento con pomodoro giallo, fior di latte, alici di Menaica aggiunte a crudo, polveri di cappero e asparago, zest di limone, poi le verdure primaverili come cicorielle, borragine, bietola, finocchietto, i legumi, simbolo di sostanza e semplicit\u00e0, incontrano i salumi cilentani e la mozzarella nella mortella, una tradizione tutta cilentana nata per conservare il prezioso latticino in foglie di mirto, fino&nbsp;all\u2019Ammaccata&nbsp;con le foglie che rievoca i pani rustici preparati con ci\u00f2 che offriva l\u2019orto. A seguire la lasagna verde e primaverile, ripiena di carciofi, fave e asparagi, dove la sfoglia \u00e8 realizzata il grano duro locale, il saragolla, in alternativa ci sono i fusilli con il classico rag\u00f9 cilentano. Poi arriva lei,&nbsp;l\u2019Ammaccata&nbsp;originale, con pomodoro quarantino cotto nel ruoto, cacioricotta di capra grattugiato a crudo, e quell\u2019impasto semplice fatto solo di grani tradizionali, acqua e sale, cotto nel forno a legna. Cos\u00ec nasce&nbsp;l\u2019Ammaccata:&nbsp;i contadini preparavano un piccolo impasto da cuocere per testare la temperatura del forno prima di infornare il pane. Un gesto semplice, fatto con farina, acqua, lievito madre e mani esperte. Oggi, Cristian Santomauro custodisce questa ritualit\u00e0. Segue il capretto arrecanato, cotto al forno a legna con patate e rosmarino: piatto simbolo della Pasqua, \u00e8 una ricetta tramandata che richiama i pranzi in famiglia, le tavole imbandite, il fuoco acceso. Si chiude con la freschezza del sorbetto artigianale ai mirtilli selvatici, raccolti nei terreni cilentani, e con la bon bon di Pasqua.<\/p>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images
