In una casseruola, preparare un soffritto delicato con olio extravergine d\u2019oliva e cipolla tritata. Aggiungere il cavolfiore e il latte, quindi lasciare cuocere a fuoco dolce per circa un\u2019ora. Regolare di sale e pepe, unire il burro e frullare il tutto fino a ottenere una crema liscia, lucida e vellutata. Versare la crema in una tazza da cappuccino.
