Lo chef <strong>Andrea di Martino<\/strong>, ha accolto i suoi ospiti, in un\u2019ambiente, accogliente e dallo stile un po&#8217; vintage. Come sempre giusti e appropriati gli accostamenti proposti dal padrone di casa, che in occasione di una serata speciale, ha scelto sapori forti e decisi. Ed ha fatto bene.<\/p>\n\n\n\n<p>Ospite della serata, <strong>La Cantina di Enza<\/strong>, azienda agricola da quattro generazioni &#8211; oramai quasi cinque &#8211; i cui vigneti si trovano ad un\u2019altitudine di circa 400 mt, sulle colline di Montemarano in provincia di Avellino. Con dieci etichette in produzione, <strong>Enza Saldutti<\/strong> insieme alla sua famiglia, hanno festeggiato nel 2025, la loro venticinquesima vendemmia. A conferire valore aggiunto al men\u00f9 proposto \u2013 da solo \u00e8 bastato a convincere i presenti \u2013 tre deliziose etichette che ben si sposavano con i piatti scelti.<\/p>\n\n\n\n<p>Tra un calice bianco ed uno rosso, Enza ha intrattenuto i presenti alternando spiegazioni tecniche ad aneddoti familiari. Come antipasto, al migliaccio salato con fonduta di caciocavallo \u00e8 stato abbinato il<strong> IV Coda di Volpe<\/strong>; <strong>Passione Aglianico<\/strong>, invece, \u00e8 stato scelto per accompagnare la polenta morbida con tracchie e salsicce e i tranci di pizza. La lasagna di Carnevale, tra una polpetta e un trancio di braciola sfilacciata, ha messo il sigillo alla serata con un intenso <strong>Padre Taurasi<\/strong>.
